Spicy Creamy Mac-N-Cheese

Ingredents:

• 16oz elbow Macaroni

• 16oz Pepper Jack Cheese

• 8oz Swiss Cheese

• 1/4 Cup Flour

• 1.5 Cups Milk

• 1.5 Cups Heavy Cream

• 1 Small Can Green Chillies

• 8 Tablespoons (1 stick) Butter

• 10oz package frozen spinach (thawed and drained)


Directions:

1) Cook pasta according to package directions and pre-heat oven to 350.

2) Meanwhile melt butter, add flour, and then cream and milk to make cream sauce.

3) Next melt 12oz of Pepper Jack and 6oz of Swiss cheeses in sauce, stirring occasionally. Save remaining cheese to top before baking.

4) Add well drained cooked spinach. Mix well.

5) Add chili peppers.

6) Salt and Pepper to taste.

7) Combine with cooked macaroni in a greased baking dish. Top with remaining shredded Pepper Jack and Swiss cheese. Bake at 350° for 25 minutes or until top is browned.
